These Chorizo Egg Bites are high-protein, flavorful, and perfect for a quick breakfast on the go! Made with eggs, cottage cheese, and chorizo, they are soft, cheesy, and slightly spicy.
Instructions
- Preheat the oven to 350°F and generously spray muffin tins with oil to prevent sticking.
- Cook the chorizo in a skillet according to package instructions, then transfer to a bowl and let it cool for 5 minutes.
- In a large bowl, whisk the eggs and add cottage cheese, half of the shredded cheese, and chopped jalapeños. Mix well.
- Add the cooked chorizo to the mixture and combine everything thoroughly.
- Pour the mixture evenly into the muffin tins. Top with the remaining cheese and jalapeño slices.
- Bake for about 20 minutes until set.
- Allow to cool in the pan for 5–10 minutes, then remove carefully and let them cool slightly before serving.
Notes
Allow the egg bites to cool completely before storing in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave for about 45 seconds before serving.
